Cheese Wafers

These are so delicious. They are great to make this time of year!

Cheese wafers:

2 cups all purpose flour,
1/2 cup butter cut up,
1 teasp salt,
dash cayenne pepper,
2 cups sharp shredded cheddar cheese,
3 tablespoons water.

In a food processor combine first 5 ingredients. Cover & process with 3 on-off pulses until mixture resembles peas. Add cheese, cover & process with 3 on-off pulses. Add water, 1 tablespoon at at a time, pulsing after each addition until mixture is moistened. Form into a log & wrap in cling film. Chill for 2 to 24 hours. Preheat oven to 400F Grease a baking sheet. Cut log into 1/4 inch slices, put on sheet & prick with a fork. Bake for 8 minutes or until wafers are slightly browned. Transfer to a wire rack.
